What products would give the best experience working with CQC?

A check of the protocol doc implies that temp sensors are accessed via the thermostat calls. Those don't report the individual sensors. You can ask what sensors are connected, but there's only one temp reported, which is presumably some average of all of them.

The docs for the wired sensors just say, see the thermostat interface above. Wireless sensors have an extra thing to check battery status, but presumably the same applies to them wrt to how the temps are reported, and those also would just feed into some average temp reported by the thermostat.
